  • Guest Blogger: The Lunchbox Diaries

Today’s guest blogger is Colleen, currently a resident of RVA, who blogs life & healthy living. Her blog will motivate you to stay healthy, and make you laugh out loud!

Hello, friends! I’m Colleen, the blogger behind The Lunchbox Diaries. Over at my little piece of the interweb, I gab about things such as being a newlywed, giving healthy living my best shot, and everything in between!

My take on healthy living is, in a word: humorous. I don’t take myself too seriously, and I don’t think you should either 😉

To be honest, I’ve had tons of ups and downs in the healthy living realm. I’ve run a half marathon.

On the other hand, I actually wrote a break-up letter to running – it’s an tumultuous relationship. I’ve found my fitness love, Body Pump – and I struggle with controlling myself around food.

I’m a firm believer that fitness looks different on every body, and that we (I’m talkin’ to the ladies here!) need to celebrate that. I, my friends, will never be a long distance runner or have a perfectly flat belly. I just won’t!

(Editors note: But she does have some sweet guns! I asked Colleen if I could include this picture!!)

And you know what? After tons of hard work, I’m okay with it.

Truth be told, my “being okay with it” fuels my mini-mission with blogging: to help other people realize how awesome they are.

    Yeah, that’s right – I’m talkin’ to you 😉

  • #RVAVegFest

Saturday afternoon was the 10th annual Richmond Vegetarian Festival, which was created specifically for people like Sarah and Me. Just kidding. But seriously. I went last year and the year before (pretty much as long as I’ve lived in Richmond) and this year was the best year, yet! There were tons of vendors and samples galore! It’s also awesome to be at a festival where you don’t have to ask “is there meat in that?”

    A few of my favorites:

Kabab Grille was absolutely amazing. They were recently voted “Best Vegetarian Restaurant” by the Richmond Besties, and wow, did the earn it! I had a zucchini dish, with veggie rice, and it was seriously delicious. I can’t wait to go visit the actual restaurant. Maybe a future VAis4Bloggers meet up?

The picture really doesn’t do it justice. It was seriously delicious.

I also enjoyed the samples from Health Starts Here, (aka Whole Foods). The red quinoa salad was good, and the garlicky kale was awesome. They were giving out coupons for free tahini dressing (which is a blend of water, garlic, nutritional yeast, tahini, apple cider vinegar, lemon juice and liquid aminos), so I can’t wait to enjoy more kale! Normally, I just use kale for kale chips or green smoothies. This opens up a whole new world of veggie munching!

Tahini dressing + Kale = side dish, done.

I’m definitely going to keep this in mind, next time I find my self in need of a fast side dish. It was tasty and easy!

Lindsay and Sarah got some of the vegan gelalto, which they graciously let me taste, and it was quite delicious!

It was a great way to cool off in the 90+ degree temperature!

We also got to sample a bunch of Simply Bar flavors. They’re currently only sold online (in the U.S.) but they are considering coming to Richmond… so hopefully they sold lots of samples at the festival! I really liked the cinnamon pecan flavor!

Throughout the afternoon, I met Robin, ran into Brian, and unfortunately missed Lauren  and Brittany!

Did anyone else get to check out the festival this weekend?

  • Richmond Vegetarian Festival This Weekend!

    Summer time is festival time.

And there is nothing I love more than a good celebration bringing the community together around a shared interest.

Especially when that interest is food.

Vegetarian food? Well, that’s just (non-dairy) icing on (vegan) cake.

I know where I’ll be this Saturday: the 10th Annual Richmond Vegetarian Festival at Bryan Park.

(Not to be confused with New York Fashion Week at Bryant Park. Just, you know, in case you made that mistake, too.)

Join me for a couple of hours of restaurants and exhibitors proferring their vegetarian-friendly wares, while we listen to local music and enjoy (what will hopefully be) a lovely summer day in the park.

The festival lasts from noon to 6:00, and the Virginia Bloggers will be meeting at 1:00 at the festival entrance, should you care to join the pack! [If you are late, tweet to us, or use the hashtag #VAis4Bloggers.]

May the greens and beans be with you. 🙂
