Today’s guest post comes from Ashton @ Something Swanky. Her blog is about so much more than the dessert. It’s about creating something new within herself.

Peanut Butter and Jelly Popcorn

One of my favorite parts about being a food blogger is getting the opportunity to work with so many fun brands. Each time I get a new product to sample, a creativity challenge issued. And it’s almost like a puzzle: what kind of a recipe will showcase the featured ingredient the best? How can I make it stand out? But blend it harmoniously with the other flavors at the same time?

Welch’s asked me to play around with their grape jelly, which, obviously, brought to mind peanut butter and jelly. I’ve seen a lot of people do baked goods with the peanut butter and jelly theme– breads, cookies, tarts, etc… So I knew I wanted to do something different.

I’m in the middle of writing a book about popcorn, and so I decided to attempt knocking out two birds with one stone: a new recipe for my book and a fun new way to use grape jelly. Challenge issued.

The outcome? Total success! This peanut butter and jelly popcorn was SO GOOD (don’t be scared by the purple– it’s awesome)! And I really love the look of it too. Give it a try! I know you’ll love it as much as I did…
